There was a way to open de horse window wile riding the horse, really usefull when training horses but i am not able to acces any more, did they change the botton layout for that or was it removed?

Yes was removed, hopefully they will add horse and workers to the main menu like we have pets. unfortunately on the button it interfered with other actions. 

You can access horse info with ring menu edit
